Overnight Oats / 3 Ways

Because it's almost the New Year, I have healthy recipes on my mind. Breakfast is my favorite meal of the day, but unfortunately I never make much time for it. I used to always wake up in enough time to sit down and eat breakfast, but somewhere along the way it turned into eating a granola bar on the way to work or making a stop at Starbucks, pastries and all. 

One of my resolutions this year is to eat better and eat out less, and for me this starts with the first meal of the day. I love overnight oats because you can make them the night before by mixing all the ingredients together and throwing it in the fridge. The next day you can just grab a jar and it's just so easy. I'm sharing 3 overnight oat recipes that are super fast to make and require little to no prep time! All three of these recipes make 2 servings. Flavors Include: Mocha, Blueberry Muffin and Banana Chocolate Chip Overnight Oats!

Mocha Overnight Oats

These overnights are super rich and chocolatey, plus have a kick of caffeine for those rough mornings. These oats were definitely the most filling and were protein packed! Because these oats are so indulgent, I prefer to eat these as a dessert instead of for breakfast. If you don't mind sweets in the morning, go for it!

Ingredients

3/4 cup Unsweetened vanilla almond milk

2/3 cup Brewed coffee

1/3 cup Plain low-fat yogurt (or applesauce)

1/2 tsp Vanilla extract 

Pinch, Salt

2 tbs Sugar (or sweetener that measures like sugar)

1 1/2 cup Old fashioned oats

1 tbsp Chia seeds

4 scoops Protein powder (I use vanilla)

2 tsp Cocoa powder

Directions

1) In a small bowl, mix all the ingredients together. Divide between 2 mason jars, cover and refrigerate 4 hours to overnight (to allow the oats to soften and absorb the liquid).

2) Enjoy cold or microwave 60 seconds to enjoy warm. 

BLUEBERRy muffin overnight oats

These oats are definitely my favorite! Mostly because I love that oat/blueberry mixture, I like to coat the top in blueberries too, oops. I prefer these oats warm- heated for 1 min 30 sec. It's also really yummy if you put some honey on top!

Ingredients

1 cup Unsweetened vanilla almond milk (or whatever milk you prefer)

1 cup Old fashioned oats 

1/2 cup Plain low-fat greek yogurt

1 tbsp Chia seeds

2 tsp Vanilla extract

1 tbsp sugar (or sweetener that measures like sugar)

 

Pinch, Cinnamon

3 tbsp Blueberries

1/4 tsp lemon zest

Directions

1) In a small bowl, mix all the ingredients together. Divide between 2 mason jars, cover and refrigerate 4 hours to overnight (to allow the oats to soften and absorb the liquid).

2) Garnish with more blueberries. 

3) Enjoy cold or microwave 60-90 seconds to enjoy warm.  (I prefer this one warm).

Banana chocolate chip overnight oats

This one's a go-to because the mashed banana gives the oats a great sweetness and topping warm oats with some chocolate chips is soo yummy! Drizzle honey on top of this one too (or really, all of them). 

Ingredients

1/3 cup Plain low-fat greek yogurt

1/2 cup Old fashioned oats

1 tbsp Chia seeds

2/3 cup Unsweetened vanilla almond milk

1 tsp vanilla extract

Pinch, salt

2 tbsp Chocolate chips

1/2 banana, mashed

2 tbsp honey (optional)

Directions

1) In a small bowl, mix all the ingredients together. Divide between 2 mason jars, cover and refrigerate 4 hours to overnight (to allow the oats to soften and absorb the liquid).

2) Garnish with more sliced bananas and chocolate chips. 

3) Enjoy cold or warm (heat for 60 seconds).
